Definition

Resource extraction refers to processes used in obtaining raw materials from the earth such as mining minerals, cutting down trees for timber, drilling oil wells etc., typically on a large scale.

Analogy

Imagine you have a giant box of assorted chocolates. You're only interested in the ones with caramel filling, so you go through the entire box to extract those specific chocolates. That's similar to resource extraction, but instead of chocolates, it involves valuable resources from the earth.
